Not only does a lamb rack look great, it’s also a tender cut of meat and loaded with flavour. Perfect for entertaining, simple to prepare, visually impressive and tastes delicious. You can cook these whole, or simply cut between the bone for lamb cutlets.
To cook the rack, season with salt and pepper, heat butter or ghee in a pan over high heat. Sear the meat for a couple of minutes on either side. The roast for roughly 15 minutes. Leave to rest before serving.
